Ingredients

  • 4 chicken breast
  • 2 1/2 cups penne
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp garlic powder
  • 1/2 tsp cayenne
  • 1 tbsp smoked paprika
  • 1/2 tbsp thyme
  • 1 tbsp olive oil
  • 1/2 onion
  • 3/4 cup heavy cream
  • 3/4 cup chicken broth
  • 1/2 cup sun-dried tomato
  • 2 tbsp tomato paste
  • 1 tbsp butter
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp thyme

Instructions

    Add chicken breasts to a bowl and season with salt, pepper, cayenne pepper, thyme, garlic powder, and smoked paprika. Mix well, ensuring all sides of the chicken are covered thoroughly.

    Start boiling some water and prepare your pasta according to package instructions.

    Add olive oil to a medium heated pan and cook the chicken for about 2-3 minutes on each side until browned. Set the chicken aside to finish cooking in the sauce later.

    To the same pan you used for chicken, add yellow onion and butter. Mix well. Then season with salt, pepper, and thyme.

    When the onions turn translucent, add tomato paste and let the tomato paste brown for 1 - 2 minutes.

    Add in heavy cream, chicken bone broth, sun-dried tomatoes, and fresh basil. Stir to incorporate.

    Add your partially cooked chicken back into the pan, spoon the sauce over the chicken, and put the lid on for about 4-5 minutes until the chicken is cooked through (to 165F or 74C).

    Turn off the heat. Remove the chicken from the pan, and add in your cooked pasta.

    Stir pasta to incorporate the sauce. You may (optionally) use some of the starchy pasta water from cooking your pasta to help thicken the sauce if needed.

    Plate it up the pasta, top it with sliced chicken, fresh basil, and some parmesan cheese.
