
Water Spinach Stir Fry
This Water Spinach Stir Fry, also known as rau muống xào tỏi, is a quick and flavorful dish that showcases the freshness of water spinach combined with garlic and savory sauces. Perfect as a side or a light main course, it's easy to prepare and packed with vibrant flavors.
Ingredients
- 1 bunch water spinach
- 1 bulb garlic
- 1 bulb garlic
- 1 pinch salt
- 1 tbsp oil
- 1/2 tbsp oyster sauce
- 1/2 tbsp fish sauce
- 1 tsp msg
- 1 tbsp seasoning sauce
- 1/2 tsp sesame oil
- 1 tsp sugar

Trim off the tough ends of the water spinach stems. Cut the remaining stems into ~2-3 inch (5-7 cm) pieces. Rinse thoroughly and drain well.

Peel and smash the larger garlic cloves; mince the smaller garlic cloves. Set the minced garlic aside.

Bring a pot of salted water with a splash of oil to a rolling boil.

Blanch the water spinach for about 1–2 minutes until the stems are just tender and the leaves bright green. Immediately transfer to an ice bath, then drain thoroughly.

Heat a little oil in a pan over medium-high. Add the minced garlic and cook until just golden and fragrant (~30 sec). Remove and set aside.

In the same pan, add more oil if needed, then add the smashed garlic. Once fragrant, add the blanched water spinach and stir-fry the stems for ~30 sec, then the leaves until just wilted.

Add oyster sauce, fish sauce, MSG, seasoning sauce, sesame oil and sugar. Toss quickly to coat; add a splash of water if the pan is dry.

Return the golden minced garlic to the pan, toss once more, then serve immediately while hot.
